Xanthan Gum

Xanthan Gum is a fermentation-derived polysaccharide that thickens and suspends at low doses, supplied in oilfield grade and in food grade at 80 and 200 mesh.

Xanthan gum is produced by fermenting sugars with the bacterium Xanthomonas campestris, then precipitating, drying and milling the polymer. Its key property is strong shear-thinning: it is thick at rest, so it suspends particles, but thins under pumping or mixing. It holds that behaviour across a wide range of temperature, pH and salinity.

In drilling, that is exactly what is needed to carry cuttings in low-solids and workover fluids while keeping pump pressures low. In food it stabilises sauces, dressings and beverages and gives structure to gluten-free bakery. Food grade is made to food additive specifications (E415) with tighter microbial and heavy-metal limits; 80 mesh disperses easily, while 200 mesh hydrates faster.

Xanthan Gum — frequently asked

80 mesh xanthan gum is coarser, disperses with fewer lumps and suits most food and industrial uses. 200 mesh is finer and hydrates faster, which helps in cold processes and instant products, but it needs good dispersion to avoid lumping.

Both are the same polymer. Food grade xanthan gum is produced and tested to food additive specifications with limits on microbes, heavy metals and residual solvents. Oilfield grade is tested for rheology in drilling fluid and is not intended for food.

Pre-blend xanthan gum with other dry ingredients such as sugar or salt, or disperse it in oil or glycerine before adding water. Alternatively add it slowly into the vortex of a high-shear mixer.
