Ascorbic Acid

Ascorbic Acid (Vitamin C) is an antioxidant and vitamin used in beverages, flour improvement, meat curing, fortification and animal feed, in food and feed grades.

Ascorbic acid is vitamin C, produced industrially by fermentation and chemical conversion from glucose. In food it is valued as much as an antioxidant as a vitamin: it prevents browning in juices and fruit, protects colour and flavour, strengthens dough in bread making, and speeds colour development in cured meats while reducing nitrosamine formation.

Ascorbic acid is sensitive to heat, moisture, light, oxygen and metals, so it degrades in some processes and premixes. For animal feed, stabilised or coated forms are often used to survive pelleting and storage. Food grade is E300.

Ascorbic Acid — frequently asked

Ascorbic acid is degraded by heat, moisture, oxygen and trace metals. Pelleting and premix storage can destroy a large share of it, so stabilised or coated forms of vitamin C are usually used in animal and aquaculture feed.

In dough, ascorbic acid is converted to dehydroascorbic acid, which strengthens the gluten network. This improves gas retention, loaf volume and crumb structure.

Yes. L-ascorbic acid is vitamin C. Its salts, such as sodium ascorbate, are also used where a less acidic form is needed.

Yes. Chemtrade manufactures and exports Ascorbic Acid (CAS 50-81-7) from Surat, Gujarat, India to more than 55 countries, for customers in Food Ingredients. Send your grade, quantity and destination port for a quotation within one business day.

Every shipment of Ascorbic Acid from Chemtrade includes a batch-specific Certificate of Analysis (COA) and Material Safety Data Sheet (MSDS). Certificate of Origin, third-party pre-shipment inspection and destination-specific regulatory documentation are arranged on request.
